Low Carb Cream Cheese Stuffed Jalapenos

When I married my husband, 4 recipes came with him.

This sort of weird recipe came with him. He made these low carb cream cheese stuffed jalapenos for a family gathering many, many years ago. My whole family loved it and now he makes them a couple time a year for special occasions. We have updated the recipe with two new ingredients. I suggest making a few the original way, without the bacon pieces and everything but the bagel seasoning. The way they were described to my hubby when he was young, this doesn't sound good but it tastes amazing.

Trust me on this recipe. I know it sounds weird but the ingredients come together and make something so yummy!

We never come home with leftovers. They are honestly a family favorite. Who would have thought that these 3 ingredients would make something yummy? Are you ready for what they are? Canned whole, pickled jalapenos, softened cream cheese, and canned, drained tuna!!! What?!?!? Yes, these 3 ingredients come together to make a delicious appetizer or finger food that is loved by my whole family. Honestly, it's a little frustrating. Trying to come up with easy and yummy recipes isn't always easy. Someone one day thought these three ingredients would make something yummy is beyond me, but it works. I love that these can fit into the trim healthy mama or low carb lifestyle. These could even fit into a trim healthy mama fuel pull if you used 1/3 less fat cream cheese. Just look at how many this makes and how many fat grams is in each one. Jalapenos and tuna are an any fuel and the low fat cream cheese can fit as well (just count the fat grams per jalapeno slice).

The real bacon pieces and everything but the bagel seasoning are new additions. Make this without those ingredients, try them and then you can add the optional ingredients if you want. You can probably tell, it was my messing with this recipe that encouraged the addition of these other two ingredients. I can't leave things alone. I'm always trying to add to or take away from recipes and see what happens. The new additions were hits but the original is still delicious. This recipe is super cheap to make, easy, no-cook, and delicious. Make this to keep in the fridge for snacks or make for your next appetizer.

Low Carb Cream Cheese Stuffed Jalapenos

  • 26 ox Whole Pickles Jalapenos
  • 8 oz Cream Cheese, your preferred amount of fat, softened
  • 4 oz Can of tuna, drained
  • 3 oz Package of Real Bacon Pieces, optional
  • Everything but Bagel Seasoning
  • Slice jalapenos in half and remove seeds. Wear gloves or at least be super careful with what you touch. Don't touch your eye.

  • Place cream cheese and tuna in a mixing bowl. If you are using the real bacon pieces, add them now. Mix well.

  • Carefully place a small amount into each half of a jalapeno.

  • Place on a platter and top with the everything but the bagel seasoning, if desired. Store in fridge.
